Edwin George Knight
July 7, 1936 – November 2, 2024
Beloved spouse, father, grandfather, great-grandfather, brother, son, colleague, and friend, Edwin George Knight passed away peacefully at home with family on November 2, 2024 at the age of 88. After breaking his leg, he contracted shingles, which led to meningitis and encephalitis. Ed looked forward to being reunited with many family members and our Savior Jesus Christ.
Ed was born on July 7, 1936 in Idaho Falls, Idaho to George Franklin Knight and Lucile Little Knight. Both Frank and Lucile came from hearty pioneer families who were the early settlers of Teton Valley. Ed was the youngest of three children and had an older brother, Lyle, and sister, Rula. Ed spent his summers on the family farm east of Tetonia, Idaho and the winters in Driggs, Idaho, where his father, Frank, was a school principal and teacher.
Ed attended high school in Driggs where he participated in band, marching band, orchestra, dance band, and served as band president. He was also involved in student government and yearbook. As a youth, Ed enjoyed the scouting program where he achieved the rank of Eagle Scout and was invited to attend the National Boy Scout Jamboree. Scouting was an important tradition in the Knight family. Ed’s father, Frank, was awarded the Silver Beaver for his work in scouting, and Ed’s son, Larry, earned his Eagle, as well as several of Ed’s grandsons.
Ed served a full-time mission for the Church of Jesus Christ of Latter-day Saints to the Western States Mission in 1956-1958. While serving in Durango, Colorado, he crossed paths with a pretty young redhead named Connie Moss. Their paths crossed again after his mission while they were both students at Brigham Young University. Ed and Connie both loved music and dancing, so they danced and dated at BYU until Ed got down on one knee on a grassy hill on campus and proposed to her. They were married in the Idaho Falls Temple on August 29, 1960. Ed studied Industrial Engineering at BYU and graduated with a BS degree in 1961.
After completing his degree, Ed went to work for Boeing in Seattle, Washington as an industrial engineer in the aerospace industry. It was here in Seattle that Ed and Connie celebrated the birth of their first daughter, Lisa. Ed’s career as an industrial engineer and computer specialist took them on many adventures throughout California, Arizona, and eventually to Utah. Each move brought another celebrated addition to the Knight family: Lauri was born in Hollywood, California, Larry was born in Phoenix, Arizona, and Lana and Lanae were born in Bountiful, Utah. It was in Bountiful, Utah that Ed and Connie chose to stay and raise their growing family of four daughters and one son.
Ed loved precision and exactness, but more importantly he loved interacting with people. So, for over 30 years, he prepared income tax returns as a side job. He found great satisfaction in helping widows and those in need. Ed enjoyed traveling to experience new cultures and peoples and together, he and Connie visited many of their bucket list dream destinations. One of their adventures took them to China, where he and Connie taught English writing classes to graduate students through the BYU China Teachers Program at universities in Qingdao and Shanghai from 2005-2007.
Family is everything to Ed and he loved being a grandfather to his 23 grandchildren and 24 great grandchildren. His love of family and the Lord led him to serve as an ordinance worker in the Bountiful Utah Temple of the Church of Jesus Christ of Latter-day Saints for many years, and more recently at the Layton Temple where he served as a priesthood sealing assistant up until his passing. All of his life he sought to exemplify his love for his Savior Jesus Christ by being an active member of The Church of Jesus Christ of Latter-day Saints. He endeavored to faithfully serve in the Priesthood Organization as a High Priest, in Sunday School, and as the Young Men's President. He took many young men hiking down into the Grand Canyon, and up Mount Timpanogos. The calling he served in the longest was as a clerk in the Ward, Stake, and a Branch in Shanghai, China. He also served as a Stake Executive Secretary for several Stake Presidents. Ed and Connie had the joy of serving a couples’ mission to the London, England Temple from 2011 to 2013.
Ed thoroughly delighted in telling stories about growing up on the family ranch in Driggs, Idaho and he loved everything about Idaho - especially his beloved Teton mountains. He was happiest when he could pull on a pair of hiking boots, strap on a backpack, and trek on a trail that would lead him to the mountains with huckleberries and meadows of wildflowers. As a young man, he and his cousins climbed all the peaks in the area, and he even summited The Grand Teton - a tradition that has been accomplished by several of his kids and grandkids. He enjoyed a good laugh with his cousins, roasting hot dogs and marshmallows up the canyon, Idaho Spud candy bars, fried chicken, corn on the cob, watermelon, barbecuing, taking his grandkids for hikes and swims at Snowbird, Connie’s homemade bread with Cox’s Creamed Honey, daily runs on Davis Boulevard, family parties, filling the font for monthly baptisms at the church, and working at the temple.
Ed was preceded in death by his parents and his brother, Lyle, and sister, Rula. He is survived by his wife of over 64 years, Connie Moss Knight, and their five children: Lisa Knight Muse (Greg), Lauri Knight Hubbard (Jesse), Larry James Knight (Denise Tobler), Lana Knight Nelson (Mark), and Lanae Knight Clark (Thayne); 23 grandchildren and 24 great-grandchildren and more to come!
Family members will welcome visitors on Thursday, November 7, 2024 from 6:00-8:00 pm at Lindquist’s Bountiful Mortuary, 727 North 400 East, Bountiful, Utah. Funeral services will be held at 11:00 am, on Friday, November 8, 2024 at the Peacefield Ward LDS Chapel, 1589 East Gentile Street, Layton, Utah, where friends may visit from 9:30-10:30 am prior to services. Interment will follow the funeral at the Bountiful City Cemetery, 2224 South 200 West, Bountiful, Utah. In lieu of flowers, donations to the Missionary Fund for The Church of Jesus Christ of Latter-day Saints would be appreciated.
Ed would like to thank the nurses, doctors, and therapists who assisted him for their compassionate care. You exemplify the healer’s art. He would also like to thank his family, friends, and neighbors for their continual love and support.
