Karen Lee Jacobs Peters

Date of birth: October 7, 1949   Salt Lake City, Utah

Date of death: March 26, 2021 St. George, Utah

Karen Lee Peters was born October 7, 1949 in Salt Lake City, Utah to Helen and Don Jacobs.  She grew up in Bountiful, attended local schools, and graduated from Viewmont High School.  Karen graduated from Utah State University in 1972 majoring in Elementary Education. She obtained a Masters’ Degree with a Gifted and Talented Endorsement.

She taught at Millcreek and Canyon Rim Elementary for 33 years. Karen was a kind, beloved teacher and a friend to the many students and educators over the years. Her excellent organizational skills, positive attitude, and innate teaching abilities endeared her to both students and colleagues.  As an educational leader, Karen served on district and local school committees in reading and writing. Granite School District recognized her with the prestigious EXCEL Award for her excellence in teaching.

In 1991, Karen married and was sealed in the Salt Lake Temple to Charles Peters. They were married for 30 years.  She loved being a mother and grandmother to Chuck’s children.

She was an active member of the Church of Jesus Christ of Latter-day Saints. She served as Young Women’s President and had numerous callings throughout her life.

Karen was an athletic and outdoor sports enthusiast.  She loved golfing, tennis, skiing, bowling and biking.  Prior to the onset of her illness, Karen was often the first or second place winner in many, many golfing tournaments in the St. George area where she loved to spend the winter months.  Always ready for a game of cards or a board game, Karen’s sense of friendly competition combined with her sense of humor made playing games with her a delight! An avid traveler, Karen visited many countries and states. She loved animals and often had a cat and a dog as a pet.

During the past eight years, Karen endured a debilitating illness with dignity and poise. Robbed by nature of her physical abilities but never complaining about her illness and pain, she maintained a bright outlook and a positive attitude.  Karen was grateful for the support of family, friends, and the cancer teams of St. George Regional  Hospital and  LDS Hospital.

Karen is survived by her husband Charles Peters; children William (Elizabeth) Peters, Julie (James) Elegante, Matthew (Rebecca) Peters, 13 grandchildren and 3 great-grandchildren. Her surviving siblings include brother Larry Jacobs; sister Patricia Bryson; and half-brother, Aaron Dickerson.

She was preceded in death by her parents and by her brothers Michael and Barney Jacobs. She leaves family, friends, nieces and nephews who will greatly miss her.
