Sheila Pauline Mary Collinson Anopol

January 9, 1936 – December 30, 2020

Mom was the only child born to Fred and Bertha Collinson in Metropolitan Borough Battersea, England. She was raised and attended school in Middlesex, England. This is where she met a young airman and married Edilberto (Ed) Anopol on August 22, 1953.  She was a devoted and faithful bride for 65 yrs.

Together they traveled the world with the USAF and were stationed at Clark AFB, Philippines for three different tours, New Mexico, Michigan and Utah, USA and England. As they filled their AF assignments they raised 6 children. 2 were born on each continent. They built their home & retired in Layton, Utah.

Mom worked at Stimson’s Market and worked her way up to manager at the HAFB Main Exchange.

She loved her friends and sisters of Beta Sigma Phi Sorority & The Ladies of the British Wives Club of Layton. As a family we wish to thank them for their friendship with mom! Mom was known for her sausage rolls and trifle that she would bring to many of their meetings and family gatherings. She was pretty good at making lumpia and yorkshire pudding… (unless they went wrong then we had hockey pucks) She enjoyed reading, keeping up with the British Royals and watching British comedies and dramas.  Over the years she was very generous to many organizations and family members.

Mom and Dad had the good fortune to spend their last years at home. As a family we are grateful for this blessing. We want to honor our brother Edward who accepted this challenge and made it possible for our parents to stay at home. Specifically the years since dad passed, he has taken such good care of mom with her daily routine care and cup of tea. We appreciate all of her children and grandchildren who cared for her during this last year, doing errands, providing meals, yard work, doctor appointments and personal care and support.

We appreciate the care from her staff from Inspiration Hospice.

She is survived by her children: Rosaleen (Mike) Welch-Clearfield, Helen (Marv) Jensen-Willard, Andy Anopol-Clearfield, Allan (Beth) Anopol-South Jordan, Edward Anopol-Layton, Maria (Dave) Smuin-Kaysville, grandchildren, Jenifer Noble, Mike Welch, Cortney Bouy, Joshua Welch,  Stuart Jensen, Nate Jensen, Camille Fairbanks, Miles Jensen, Jake Anopol, Tricia Rushton, Whitney Anopol, Spencer Anopol, Molly Wiley, Tanner Kennedy, Madison Garcia, Whitney Novenario, McCall Kirk. 29 great grandchildren and 2 great great’s on the way.

She was preceded in death and welcomed to the other side by her parents, husband Ed-his parents and grandson Joshua.

A family celebration will be at her home on her birthday, Saturday at 1:00 PM.
